George Braun was born in a small farm town in New Jersey. His first restaurant job was as a busboy until dropping plates got him demoted as a dishwasher, which oddly enough he enjoyed much more. There was something about the energy in the kitchen that George was drawn to. At age 15, he took a job as a butcher’s apprentice after school. He pursued this career until he was confident that he had mastered the art of butchery. He then carried over the knowledge and combined it with his passion for cooking ultimately driving him to open his first restaurant. This experience was not only a learning one, but also one that came with the confidence to pursue his next endeavor. Gaining statewide fame, in NJ Monthly’s Critic’s Choice Best Lunch Spot for a running total of 5 years, can definitely be a star of achievement. George brought this entire concept with his when he moved to Denver.
